Minty Kiwi Hydrating Smoothie

Ingredients:

  • 1 cup of ripe kiwis, peeled and chopped  – 110 calories
  • 1 small cucumber, peeled and chopped (approx 100 grams) – 16 calories
  • 1 cup of cold water or coconut water (250 ml) – 0 calories for water / 45 calories for coconut water
  • Juice of 1 lime – 12 calories
  • A handful of fresh mint leaves (approximately 10 grams) – 2 calories
  • Ice cubes – 0 calories
  • Stevia or dates syrup to taste (optional) – 20 calories per teaspoon of dates syrup (optional)

Nutritional Information (per serving):

  • Calories: :173 calories (without optional sweetener): 168 calories (with water) / 193 calories (with coconut water)
  • Recipe yields approximately 2 servings. Each serving would then have the following calorie content: 86.5 (without sweetener): 84 calories per serving (with water)  and with coconut water (without sweetener): 96.5 calories per serving
  • Vitamins: High in Vitamin C, Vitamin K
  • Minerals: Good source of potassium and magnesium
  • Fiber: Contains loads of dietary fiber

Instructions:

  • Peel and chop the kiwis and cucumber into small pieces.
  • Squeeze the juice from one lime.
  • Add the chopped kiwi , dates syrup, cucumber , lime juice , and mint leaves  into a blender.
  • Pour in the cold water or coconut water.
  • Blend until smooth.
  • Sweeten (Optional):Taste the drink. If you prefer it sweeter, add a small amount of stevia or dates syrup and blend again.

Serve:

  • Fill a glass with ice cubes (0 calories).
  • Pour the smoothie mixture over the ice.
  • Garnish with a slice of kiwi or a sprig of mint if desired.
